White Landes Asparagus (Asperge des Sables des Landes)

In France, the white asparagus is a sure a sign a spring and best variety comes from Landes region in Aquitaine. Perfect combination of sun light, fine sandy soil and oceanic climate provide the essential factors to give it such unique flavour and tenderness, highly sought after by many.

This week, Chef Mikaël serves up a classic combination of sautéed white asparagus imported from Les Landes and fresh morel to lend the dish that deliciously rich, yet earthly and nutty flavour.
